Peruvian cuisine, considered among the best in the world, inherited its innovation, mix and flavors from Peru’s history. Its culinary fusion developed over a long process of cultural exchange between the Spanish, Africans, Chinese, Japanese and Italians, among others. The dishes became more and more varied as races mixed and migrants landed at the port of Callao.

DAY 1
WELCOME TO LIMA! THE GASTRONOMY CAPITAL OF SOUTH AMERICA

Welcome to Peru! Upon arrival, you will need to clear Immigration and Customs. Upon exiting the Customs Hall, you are met by our Lima Tours representative. He/She will be holding a sign displaying your name. You will then be transferred to your hotel in the Barranco area.

DAY 2
LIMA: FLAVOURS FROM THE COAST

There are many ways to get to know a city, but one of the most gratifying and interesting is through its food. This is especially true in Lima, with the infinity of textures, colors, aromas and flavors that this generous land provides. Lima has ancient traditions and a long established culinary style which has grown from a variety of roots. It is a hospitable country whose inhabitants enjoy good food and are pleased to share it!

Today´s culinary experience, will begin at the producers market of San Isidro, where you will discover their stands and main ingredients used in Peruvian cooking, accompanied by a Peruvian chef. Then you will be transferred to Urban Kitchen to be part of an active cooking lessons where a chef will demonstrate dishes from our country. After this fun experience,
you will enjoy the delicious dishes prepared in class.

This evening you will enjoy an amusing experience, learn how to prepare the best classic Peruvian and Mediterranean cocktails, perfectly paired with delicacies made from the freshest local ingredients. The sommelier will guide you in this unique and fun lesson where you will prepare and enjoy what you have learned. Salud!

DAY 3

FROM THE COAST TO THE ANDES: THE SACRED VALLEY OF THE INCAS

A transportation service will pick you up from your hotel at the established time and will transfer you to the airport of Lima. Assistance on departure.

Upon your arrival you will meet your guide and you will be transferred to your hotel in the Urubamba Valley, the Sacred Valley of the Incas.

Lunch will be served at Wayra Ranch. Delight yourself with a surprising gastronomic feast led by the prominent Chef, Pedro Miguel Schiaffino and Nacho Solis. Stunning Peruvian Paso Horse demostrations, to the rhythm of marinera music will render the environment favorable for tasting the quality of their cuisine.

After lunch get to know the core of the Peruvian cuisine: The Chacras (“Plots”). Discover different types of maize, organic vegetables, potatoes, native fruits of the region, dairy farms, trout farms and much more. Learn from the demonstrations of ancestral agricultural techniques, irrigation systems, the agricultural calendar and rotation of crops which are still in used by the local communities.

Later you will enjoy a special dinner at The Cellar. An intimate corner, marked by good taste and the kind of worldly sophistication, where some of finest wines in the world are stored. A beautiful dining room for 12 people, specially designed for cozy private dinners. Nacho Solis, our resident chef and Gino Pacheco our expert sommelier, are always ready to discuss the menu and the perfect wines to serve. This dinner will comprise a five step menu required to learn about wine tasting. Dishes here are created by the most discerning palates and only using local ingredients. Enjoy.

Important:

Tonight, please pack an overnight bag for your journey to Machu Picchu. Due to luggage restrictions aboard the trains to/from Machu Picchu, passengers may only take 1 small bag weighing no more than 5 kg (11 lbs). The rest of your luggage will be taken to Cusco city and will be stored at your selected hotel. You will retrieve your luggage on Day 5.

DAY 4

THE SACRED VALLEY OF THE INCAS

You will begin your trip visiting the archaeological vestiges of Maras and Moray. Maras is an impressive salt mine complex. These are huge salt deposits that were exchanged for other products from other parts of the empire. Moray’s archaeological vestiges are composed of mysterious concentric circular terraces which, according to some scholars, would be an agricultural research center. The higher external terraces would be at a higher temperature than the inner terraces and could simulate the different ecological strata of the empire.

You will then enjoy a picnic lunch nearby. Later stop at a local “Chicheria" and learn about the different ways of preparing this popular Andean corn beverage.

Continue the trip to Ollantaytambo, take a panoramic view of this amazing fortrees (from the outside). It is a typical example of the urban planning of the Incas, whose residents still live in accordance with their old traditions. Pachacútec (1438-1471) conquered the town, destroyed it and built a new one, absorbing it as part of his empire, and it is currently considered one of the most remarkable archaeological complexes of the Inca Empire.

You will be taken to the Ollantaytambo Station where you board the afternoon Vistadome train to Machu Picchu’s Aguas Calientes. On arrival you will walk to your hotel for check in. Dinner will be served at your hotel’s restaurant.

Important:

The visit to Moray and the Salt mines of Maras will be restricted during rainy season (from December to March). During that period of time a visit to the Chinchero village will be provided instead. The rest of the services will maintain as per the itinerary.

DAY 5

PICCHU: NEW WONDER OF THE WORLD

This morning you will meet your guide and together you will take a 30-minute shuttle-bus ride to Machu Picchu, the “Lost City of the Incas". The ruins are located in a lush jungle and are believed to have been built in the mid-15th century by Inca Pachacutec. Lost in history, it was not discovered until 1911 by the American explorer Hiram Bingham. Enjoy a private tour of the fabled ruins.

Now recognized as a member of the new 7 Wonders of the World, Machu Picchu is a marvelous and famous citadel which combines the visual and spiritual force of magnificent natural scenery with the natural diversity of a historic sanctuary. Machu Picchu is recognized as a Cultural and Natural Patrimony of the World which rises to an altitude of 7,900 feet above sea level between the Huayna Picchu (young peak) and Machu Picchu (old peak). It lies within the spectacular framework provided by the exuberant vegetation of nearby jungle and the rugged landscape. The ruins are situated on the eastern slope of Machu Picchu Mountain in two separate areas – agricultural and urban. The latter includes the civil sector (dwellings, canalizations) and the sacred sector (temples, mausoleums, squares, royal houses). Although the constructions show different levels of architecture, the religious buildings exhibit a high degree of perfection. The construction was generally in stone and the roofs were built of tree trunks and thatched with ichu or straw. The walls lean slightly inward to protect against earthquakes. Lunch will be at the Sanctuary Lodge.

Later, take the bus down to Aguas Calientes, and head to the train station to take the Vistadome train to Ollantaytambo or Poroy station (according to availability). On arrival, you will be transferred to your selected hotel in Cusco city.

DAY 6

CUSCO CITY, THE LAND OF THE INCAS

This morning enjoy Peruvian cuisine class with a local chef; discover San Pedro Market where you`ll experience a private journey through our Pachamama’s gifts. More than 3000 different kinds of potatoes, exotics fruits, chicha, andean cereals and some other surprises. Later you will be transferred to an outdoor kitchen in the middle of an eucalyptus forest with an amazing view to the city.

Then you will visit Sacsayhuaman, one of the most emblematic constructions of the Incas; a huge fortress made of large stones which transportation is still a mystery. Return to the city and enjoy a panoramic tour of “The Temple of the Sun" (Koricancha). Then admire the Cathedral, the imposing monument in the Plaza de Armas. Pass by the side streets like Loreto and Regocijo, and finally return to your hotel.

Farewell dinner will be served at the Pre-Columbian Art Museum’s (MAP) restaurant.
